I just completed my 1st workout for the SECOND week of 21 Day Fix meal plan and workout program! BOY AM I TIRED! After my workout today I made a really good filling lunch! It was so good I made another portion for my boyfriend for lunch too (I know I am a great girlfriend!). Then I got to thinking. This program really doesn’t leave you starving. I’ve only been really hungry 1 day so far, which I think had to do with my food choices. You will come to notice what foods fill YOU up more than others. Today I just wanted to show some “meals” I have had that have really kept me satisfied!
STEAK, POTATOES, VEGGIES
You can still do 21 Day Fix if you are a meat and potatoes kind of person. I had a 6-8 oz piece of filet, roasted potatoes, and roasted cauliflower and broccoli for dinner one night. I also made a very very yummy reduced balsamic vinegar sauce to drizzle over EVERYTHING! To make it all you do is pour a good amount of balsamic vinegar into a small pot. Bring it to a boil on medium/medium high heat and let it boil until it looks like 1/4th of it is gone. Once you take it off the burner it will thicken a little. This was also a great meal because my boyfriend (who is not on a diet, hes actually trying to gaining weight, darn guys!) had the same meal with me and was satisfied with his larger portions! This meal consisted of 2 red containers, 1 green containers, and 1 yellow container.
CALIFORNIA ROLL (6 PIECE)
6 pieces of sushi is equivalent to 1 yellow container, 1 green container, and 1 red container. NO SOY SAUCE THOUGH! This program also always you to eat out. I see some veggie lo mein in my future!
COCONUT CURRY TILAPIA, SPINACH, AND COUSCOUS
I made this a couple minutes ago and had to share right away! SO GOOD and FILLING! I want to use the same recipe above but use chicken or shrimp with zucchini next time! I was actually going to make it with chicken at first but realized we didn’t have any so I just used what I had in my freezer.
I am loving 21 Day Fix! I can’t wait to show everyone my before and after pictures on day 21 (well maybe the day after)!
