Today is the 7th day of 21 Day Fix for me! My tummy is looking GREAT and I can tell I have more energy in the morning. I am sore as HECK but that was expected. I’ve also come to realize that I hate cardio! I have never liked working out BUT you gotta do what you gotta do right?! Hopefully after these 21 days of doing workouts everyday will change my mind when they get a wee bit easier.
I wanted to try something a little bit different for lunch. I looked around my fridge and decided I wanted to make some tilapia ceviche! I was also going to use one of my “treat” yellow containers for tortilla chips to go with it!
This is really simple to make but should be made WAY ahead of time. I used 1 red container of chopped up raw talapia and 1 green container of cucumbers, tomatoes, and purple onions. I’m not really a fan of onions so I put the least of that in it. I found a small/medium sized container that could fit all the ingredients. I dumped everything in and added the juice of 2 limes and 1 lemon. I then added black pepper, garlic powder, and cilantro (fresh is the BEST option but I did not have any so I had to use dried). I stirred it up and made sure there was enough juice to cover all the fish and veggies. I put it in the fridge and left it there overnight. The next morning the fish is nice and white and everything is just so delicious! I ate it with the tortilla chips for a light after workout lunch!
I also wanted to mention, I love thinking of out of the box meal ideas. You can make 21 Day Fix meals as easy or as complicated as you want. Don’t be intimidated by all the work you may think it takes to prep meals! Its really not bad at all!
