Today is officially day 14 of 21 Day Fix and I have not cheated once! I love seeing my results in my body every morning.
Yesterday I wanted to try to make a jambalaya with red quinoa but I really didn’t have most of the items needed, like tomatoes, fresh onions, or red or green peppers. Instead just decided to make a very flavorful and spicy quinoa with seafood and veggies.
This is an easy recipe that satisfied my spicy craving.
– Make the quinoa according to it’s instructions. Instead of water I used low sodium chicken broth and added the 21 Day Fix all seasoning, paprika, thyme, and cayenne pepper. When I make the 21 Day Fix all seasoning I like to add extra of all the other ingredients except salt.
– I like to save my allowed TSPs for sunbutter so I don’t use olive oil to cook. I will usually use cooking spray or water. In a heated skillet spray cooking oil all over. Add all the seafood and veggies. Then add the same seasonings that were added in the quinoa.
– Once the seafood and veggies are coated with all the seasonings, add a splash of water to moisten everything up.
– When everything is nice and tender mix in the quinoa and enjoy!
